One of Breaux Bridge’s main attractions is its cuisine. Authentic
Cajun and Creole cuisine is an incredible fusion of flavors, and crawfish
is the celebrated centerpiece of local cooking. Breaux Bridge’s
restaurants were the first to offer crawfish openly on their menus, and
it was here that the now world-famous crawfish étouffée
was created. Breaux Bridge became so well known for its crawfish farming
and cooking that, in honor of its centennial celebration in 1959, the
Louisiana legislature officially designated Breaux Bridge as “la
capitale Mondiale de l’ecrevisse” – “The Crawfish
Capital of the World.”
Since
this designation, the Breaux Bridge Crawfish Festival Association has
hosted the annual crawfish festival, recognized as one of the state’s
finest annual events.
Today, more than 1,600
farmers produce crawfish, utilizing over 111,000 acres of man-made ponds,
and the once insignificant crustacean has become a multimillion-dollar
industry. Louisiana is the largest producer of crawfish in the world,
and St. Martin Parish (in which Breaux Bridge is located) produces the
most crawfish in the state. It also has the most crawfish acreage in the
eight-parish area known as Acadiana.
